Spelt Pancakes with Blueberry Banana Syrup

Found a recipe for spelt pancakes on Pinteret and decided to give it a try. It turned out better than I thought it would. These pancakes were so delicious and moist. I had fun making these :) hope you give it a try.

Recipe (I tweaked the original one a bit) so this is what I came up with

Pancake batter:
1 cup spelt flour
1/2 teaspoon nutmeg
1 teaspoon baking powder
1 cup almond milk
Had some overnight oats so I added 1/2 cup to the batter.

Mix all ingredients together and let sit for 5 minutes.
Cook on medium/low heat

Syrup recipe: (You can use any fruit you desire)
1 banana (frozen)
1/2 cup frozen blueberries
Mix in blender to get desired texture or until smooth.

Serve and enjoy :)

Quinoa Spinach Patties

Recipe
2 1/4 cup cooked quinoa
1/2 cup cooked spinach (I used frozen)
1 cup black beans 
3 garlic cloves
1/4 onions
1 tablespoon parsley
1 tablespoon basil
1 teaspoon lime
2 tbs flax meal
Salt, cummin, paprika (season to taste) 
2 tablespoon olive oil

Quinoa:
Place 2 cups water in a pot add 1 cup quinoa. Bring to a boil reduce heat to low allow to simmer. Cook for 10-15 mins. Remove from heat allow to cool. Fluff gently with fork. 

Add all the ingredients together and mix (mash black beans with a fork before adding it to mixture). 
Form mixture into patties. Turn fire to medium heat add olive oil or coconut oil and cook patties a few minutes on each side until golden brown. 

You can bake patties if you don't want to fry them. 
Preheat oven 375 degrees. Place patties on lined baking sheet and bake for 30 min each side. 

Serve with brown rice and vegetables if you like or make delicious veggie sandwiches. 



Mango Delight

Recipe:
1 ripe mango
1/2 cup almond milk (optional)

Peel mango
Slice mango 
Place sliced mangos in zip lock bag for 3 hours (over night if you like)
Put mango and milk in blender
Blend until texture is smooth

Serve and enjoy

Homemade Banana Ice Cream

2-3 very re bananas
1/2 cup almond milk (optional)

Peel bananas
Cut them into pieces
Place in zip lock bag
Freeze 3 hrs or over night
Place bananas and milk in blender/magic bullet
Pulse until ice cream texture
Serve

Lentil Loaf


Looking for a delicious lentil loaf recipe? Look no further. I found this recipe on Pinterest and tweaked it a bit (http://trans-planted.com/lentil-walnut-loaf-with-moms-special-sauce/).  

Recipe:

1 1/2 cups cooked lentils 
1 cup mixed veggies, defrosted and drained 
1/4 cup chopped red onion
1/2 cup chopped fresh Italian parsley
3-4 garlic cloves, peeled
1 cup raw walnuts
2/3 cups uncooked oats (not instant)
1/2 cup organic vegetable broth
1 teaspoon salt
1/2 teaspoon oregano
1/2 teaspoon cumin


Preheat oven to 350° F.

Put lentils, defrosted veggies, onion, garlic, parsley, walnuts, and oats into a food processor. Mix together until texture is smooth. 

Add seasoning in with the lentil mixture. Mix well. Scrape mixture into a loaf pan (any baking pan if you don't have a loaf pan) 

Bake for 50 mins. 


My 17 month toddler could not get enough he loved this lentil loaf.

Kale Slaw

This recipe was Pinterest inspired.
Ingredients
1 small avocado 
1/4 apple cider vinegar 
1/2 teaspoon sea salt
1/2 lemon juice
1/3 honey 
1tablespoon black sesame seeds. 
Mix together in blender/food processor. 
Add handful raisins/cranberries 

Hummus Dip

had some leftover chickpeas (from a meal I had cooked for my son a few days ago) so I decided to make some hummus. I found a really simple recipe (http://allrecipes.com/recipe/real-hummus) that I tweaked a bit since I didn't have all the listed ingredients. The end result was a delicious, creamy, hummus that I used as a dip for my broccoli and carrot melody.  

Ingredients
1 cup of chickpeas 
1 garlic clove
4 tablespoons lemon juice
1 teaspoon salt
1 tablespoon coconut oil
Drizzle a little honey

Mama's Homemade Veggie Patties

My mother is known for making delicious vegetarian dishes. One of which I decided to make for the weekend!
Veggie Patties Recipe:
1 cup chopped walnuts (pecan meal could be used instead)
1 cup bread crumbs
1/2 onion
1/2 green pepper
3 eggs

Mix ingredients together and fry on medium heat.

Sauce:
1 cup ketchup
2/3 cups brown sugar
1 teaspoon nutmeg

The Importance of Water

Did you know that water is a part of every cell in the body? Water is so important because it helps to regulate our body temperature.

Did you know that waste and secretions are carried out of the cells by way of water?

A lack of adequate water intake is a burden to your body. When you don't drink enough water the body reacts by keeping extra sodium in the blood to keep up the water level as much as possible. If you continue to not drink adequate amounts of water did you know that the body's fluid and electrolytes can become very imbalanced, resulting in severe health problems?

Through out the day your body losses water by way of perspiration, waste excretion, and from our lungs when we exhale.

God is so awesome that He made it possible for our bodies to compensate for the loss in various ways. We can receive water from the foods we eat (fruits and vegetables), and we can drink water to replenish our system.

Begin your day by drinking 2 glasses of warm water. This warm water will help to awaken your digestive tract, get it cleaned out, and get you ready for your day. It is also important to drink water between meals and NOT with your meal. Drinking and eating slows down digestion and makes it more difficult for your food to digest.

If you drink a glass of warm water one-half to one hour before each meal it will help to satisfy your thirst and the water should be out of your stomach before you eat your next meal.

Finish your day by drinking a glass or two an hour before bed.

The best liquid to cleanse the body internally and externally is WATER.  

Water Challenge

Replace all beverages with water for one week. No coffee, juice, and soda. Only tea is allowed.
Start date: May 1, 2013 at 9am
End date: May 8, 2013 at 9am
Encourage a family member or friend to take the challenge with you.

If you already drink nothing but water CONGRATULATIONS!!!!!!!!!!!!!!!!! on accomplishing this healthy habit. Invite a friend or family member to take the challenge and you can become their support system.
It takes about 21 days to form a habit. So if drinking more water is on your "to do" list this year continue the water challenge after the 1 week.

1/2 kiwi

1cup soy milk
1/2 cup mango protein plus
1 tbs flax seed (ground)

Vegan Corn Bread

Today I found a recipe for Vegan Corn Bread and decided to give it a try. I got the recipe from www.thehealthyfamilyandhome.com

I tweaked the recipe a bit

Ingredients
2 cups ORGANIC cornmeal
1 cup whole wheat flour
2 teaspoons baking powder (aluminum-free)
1/3 cup organic coconut oil (melted)
2 tablespoons molasses
2 cups soy milk
2 teaspoons organic apple cider vinegar
1/2 teaspoon sea salt

It turned out pretty good. I think I'll be using this recipe again soon.

"We are what we eat" is not just a quote but our reality. I recently gave birth to a beautiful baby boy that I love so much. I want to be alive and healthy so I can play with him, have fun with him, and share precious memories with him. Children watch their parents and do what they see them doing. I NEED to live a better life and be a positive influence to my family.

It is so important that we live healthy lives and keep our mind, body, and soul free from clutter. These are the vessels which God uses to speak to us his children. Our relationship with Him should be #1 and anything that distracts or hinders the relationship should be eliminated [Exodus 20:3].

A lot of the things we allow to enter our mind (via television or radio), and body (the food I eat) are not pleasing to Him and I'm sure you can agree that Many of us are guilty of this. The things we watch, the food we eat, and the environment we choose to be in all impact our lives in some way or another. These factors can also affect our mood, behavior, and attitude. I have seen first hand how what I eat, watch, and the activities I engage in affects my attitude and I must admit it isn't a pretty one. I'm ready to do something about it because God expects and deserves better and so does my family.

Where to find me....



Vegan Banana Bread Pudding

I don't particularly care for baking and things of that sort, but this week I decided to give it a shot.

I found a really simple recipe for vegan banana bread. I had some extra bananas and decided to give it a try. Turned out pretty good 😊. I got the recipe from www.cheapandsimpleveganrecipes.com and tweaked it a bit. Instead of 1cup sugar I used 1/2 cup, and I replaced the butter with 1/3 cup coconut. oil. I also added some almond nuts and carob chocolate (about 1/4 cup each and chopped them up in the food processor). The recipe called for 1 teaspoon vanilla extract, but I didn't have any so I didn't add it to.

Here is my version of the recipe:

  • 3 very ripe bananas 
  • 1 1/2 cups whole wheat flour
  • 1/3 cup Coconut oil melted
  • 1/4 cup applesauce
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 1 teaspoon baking soda
Pretty simple and healthy.
